+1 to all of A Y's suggestions. Osvaldo Golijov and David Lang are two more contemporary composers whose work is quite accessible. (Check out "La Pasion Segun San Marcos" and "The Little Match Girl Passion" respectively.)
Helmut Lachenmann is wonderful, but much more "difficult." Wolfgang Rihm is also very good.
