I used a digital probe temp and it did get to 160F, perhaps next time will go by visual indicators as mentioned. Thanks for the insight!

Late reply, but we've got poisson d'avril in France for April 1st.

Where can I buy sorrel (preferably red)? Whole foods and some other supermarkets didn't have it. Do I just need to wait till Farmer's markets in May?

it's hard to find, no doubt. Never seen it at whole foods, and I look for it.

I've seen it at the NYC Farmer's Market, and at Fairway grocery store. Even then, I only see it every now and then, and I grab it when I do see it.

Any ideas for what to do with pork butt/shoulder? Was thinking about carnitas...

How the hell do you only have 86 posts over an entire decade? You are my new favorite poster.

Does anyone else find food slang-jargon way too precious and affected? Even when I hear shit that makes sense I'm just like, you sound like an idiotic tool.

On another note... do people still say XXXX-forward? That seemed to me the most ridiculous because IT IS MEANINGLESS! Also, I remember an article in Lucky Peach where Anthony Bourdain heard another chef say "ingredient-driven menu" and he responded "What the fuck does that even mean? Isn't that, like, how all menus should be?"

In an ideal world, you would be right. Unfortunately, at so many restaurants today the ingredients are treated almost as incidental to the chef's technique.

I've been catching some new TV commercial for a female oriented drug. The line is, "it works inside my body to..." So basically it's like every other medication in the world outside of topicals? confused.gif

To answer your question via email: no.

But wouldn't topicals be absorbed into the skin, thus working inside the body? (I know nothing. Specifically about medical terminology, however).

I was giving them the nod on topicals but you can see it's tenuous at best. I really, really hate that particular piece of ad-man talk though.

Unrelated but have you noticed how many car ads now have a Jon Hamm-wannabe doing the voiceover?

Like, has anything else I've ever typed made sense?
