Anybody got a recipe for a meat pithivier, particularly the force? I have puff pastry, duck confit on hand, and I can get anything else, including quail and foie gras.

True, but even among the great, there's better and worse. And since I don't have any Thai cookbook at hand, and rather prefer the opinion of sf-foodies than 0185-interweb-foodies, I'd prefer a recipe recommended by someone over here. Is there no LAT article about Tom Kha Gai (yet)? wink.gif
Plus, I really crave some Tom Kha Gai and since it's the first time I'll be cooking it, I'd like a good recipe.

[sigh] you are just trying to get me on edina's hit list, arent' you? this is from a very good guy named Jet Tila who is a pretty popular chef now but started as an intern in our test kitchen (of course it helped that his parents own the biggest thai food distributorship on the west coast).

Not sure if I've posted this before but if I am out and about and have a food question, especially if it deals with a specific ingredient, I just google its name and LA Times in my phone. Since I've started doing it I don't think its let me down once and i've made some esoteric-ish searches.

I get a couple of subscriptions paid for by my employer. I currently don't have any although I've considered getting the WSJ just so I can skip their paywall (the NYTimes paywall is easy enough to avoid if I hit the limit)...although we already get paper copies delivered to the office. Maybe I should just claim I need the LA Times and expense that instead.

I problably shouldn't tell you how to avoid the WSJ firewall but it is really easy, too. IMO, the weekend WSJ is the best Sunday/weekend paper around (Sorry, fg!). And yes, I read the paper version.
