I think Blumenthal does them at like 150 for a number of hours, but I'll have to verify that when I'm home.

I know Matt likes those Thermomix thingies. Cooks Illustrated liked the Cuisinart stand mixer. Really depends on what you're doing with it.

this makes sense, my other guess was 180 F (which is basically 80c) but I stuck with my guns at 150F

I don't know what Blumenthal says. Bras definitely does 80c overnight. One should remember that if they want to powder the dried olives they will need tapioca maltodextrin to avoid a clump. You can dry out olives, but you can't dry out the oil.

Thanks all. I will be using them to make Bras' monkfish poached in black olive oil tomorrow.

Rambo, I just need one for making herb oils and purees that don't require a 14-cup food processor.

a superb cookbook store I know of has a lot of copies of the English version for $120 a book.

I can read French, or at least attempt to as I learn, but one of my moms' best friends is from Paris, so she helps whenever I have a question.
