Wow, is Pepin still alive?
Would watch this if it wasn't on at the same time as the game.

Alive and cooking better than 99% of people in the world.

Dude.. they replay it like 7 more times at later time slots. And I hope Butler embarrasses the shit out of Duke tonight, but I'm sadly not very optimistic.

I'm not very optimistic either. But I hope they win, and I think they do have a better chance than a lot of people are expecting them to. I don't necessarily think it's going to be some "Hoosiers in real life" kind of moment if they win though. They might be an "underdog" but that description doesn't really fit them for anyone who's watched this season.

I'm definitely going to catch this at a later time slot. I'd love to see if Keller actually gets his hands dirty, which nobody has ever really seen.

I prefer to take my technique advice from someone a little more established

That Thomas Keller roast chicken technique. I dare someone roast a chicken at 425-450 degrees in a run of the mill home oven and get the result he got from his restaurant oven which probably is custom designed from the high end french company and cost as much a mortgage for a house. I bet if someone leaves it in a 450 oven at home and not touch it, the chicken will definitely be burnt in some areas. Also, he appears to be using an All-clad masterchef 10" pan. Most people don't have good cookware at home. Again, uneven heat from the bottom as well. Also, he is using a great organic, free range chicken. You can never get that from roasting Perdue bird from the supermarket. I tell you, I got one of those birds at the farmer's market. I didn't have to do shit with it. Just a bit of salt, pepper and a bit of dried thyme. It was fuckin' ungodly good. Try to do that with a supermarket bird. Absolutely no comparison. But the price is where it's at. A 3 pound organic free range chicken will set you back a good $15-$18. The Perdue, no more then $5.00 and less when it's on sale. I don't think most people even know the difference. So when they see how it's done on TV and when they try it at home and the results are shit, they give up and run to the nearest KFC.
