Add a handful of raw sliced almonds to my tilapia filet as it fries in olive oil.

Pine nuts (or walnuts to save cash) +

fresh basil
2 cloves of garlic
lemon juice
olive oil
parm cheese
salt to taste

= best pesto ever

We use nuts in a lot of meals at my house. Toasted pine nuts in pasta dishes. Toasted cashews or peanuts in Thai dishes. Toasted walnuts, almonds, or pecans in salads.

Finely ground cashews mixed with curry powder and sea salt sprinkled over kale and left in the dehydrator overnight. Spicy kale chips...way better than they sound.

I've got an excellent salad for you using slivered almonds: Brocolli heads cut into bite size, halved baby tomatoes, squares of red onion, slivered almonds, thinly sliced garlic and your basic vinegrette (S&P, red wine vinegar, honey, EVOO, drop mustard, etc) Try some crunchy toasted sourdough bread with a slathering of strawberry jam, slice of bree cheese, and walnuts or cream cheese, apple slices and almonds If you're making pesto, I suggest chopping everything by hand. You'd be surprised what a difference it makes instead of using the blender. Completely different texture and taste.

I like cashews made with the Union Square Cafe Bar Nut recipe - warm nuts with rosemary, some salt. some sweet and cayenne......heavenly smell out of the oven and delicious!

As with peanuts, almonds technically aren't nuts. Actually, according to http://en.wikipedia.org/wiki/Nut_(fruit), none of the "nuts" mentioned are.
