I made a splendid dressing for a tomato and cucumber salad tonight.

olive oil
white wine Vinegar
lemon juice
fresh dill
sugar
salt
pepper

Quick tip: If you crave the thick, unctuous texture of a creamy dressing but want to step up to the upscale flavor of a classic vinaigrette, make it in a tall glass or cup with a stick blender. Start with the mustard, vinegar and any herbs, shallots or whatever. Drizzle in the oil while zapping with the stick blender, makes a good dressing that takes a long time to separate. Covered, it'll keep in the fridge for a couple of days.

2:1 olive oil to vinegar with some dijon mustard and a tiny squirt of citrus. If I get fancy, I'll add toasted ground pine nuts.

I used to be a olive oil/balsamic only person, but I do the above with regular cheap old distilled vinegar and it's great
