Healthy Pancake Recipe

I just wanted to share a healthy pancake recipe with anybody interested. It's become one of my favorite quick healthy breakfasts. The recipe comes from Eating for Life and while the individual ingredients sound kind of gross mixed together it is really quite good. In a blender mix: 1 cup uncooked non instant oats 1 cup fat free cottage cheese 6 egg whites 1/4 teaspoon vanilla 1/4 teaspoon cinnamon 2 packets of sugar substitute (and I usually toss in a banana) Mix thoroughly in the blender and then cook as you normally cook pancakes. Top with some sugar free syrup and fresh berries. Makes 2 servings Anyways, if anybody gives it a go let me know what you think.

Interesting. I have a similar recipe: Per person (I don't measure) Oats (probably around 1/3-1/2 cup) fat-free cottage cheese (?) buttermilk or milk + joghurt/lemon juice/vinegar 1 egg, divided salt ~tbsp whole wheat flour 1 tbsp sugar vanilla nutmeg Basically, you soak the oats in the buttermilk or milk+souring agents. Meanwhile separate the whites and yolks. Beat the whites till they hold a stiff peak. Beat the yolk and sugar a bit till pale, then add the soaked oats, flour, nutmeg, vanilla, & salt. fold in the beaten egg whites, & cook. You have to be a bit careful cooking and flipping these. Telling when they're done is also a bit tricky. I like to serve them with jam and a bit of whipped cream. My favorite variation is with orange zest in the mix and then red currant jam on top.

Sounds interesting, I might give your recipe a try this Saturday morning. Pancakes are one of my favorite foods so I am always on the look out for healthy alternatives to the original.

My recipe -almond flour -2-3 egg yolks -liberal amounts of cinnamon -dissecated coconut -almond cream No amounts except for the eggs, you just look at the consistency and add coconut/flour till it thickens up.

I haven't had pancakes for so long. I may have to try some of these and I won't feel as guilty becausethey're healthy :P

I actually mis-wrote the recipe... sorry. coconut cream* (at the end) The pancakes are pretty tasteless without syrup but at least they're fluffy. They do have that chewiness to it cause of the coconut.

Pure maple syrup is a must for all pancakes, IMO.

I eat whole wheat pancakes, its a little dry but its ok with me. BTW, I suggest not using sugar free syrups, most (almost all) are made with sucralose or aspartame which is very bad for you. Best is to use natural maple syrup but use moderately. Or you can try your favorite berry cooked in natural fat free sugar.

1 cup flour.
1 tablespoon sugar.
1 teaspoon baking powder.
1 teaspoon baking soda.
1 pinch salt.
1 cup buttermilk.
1 tablespoon butter.
1 egg.

Heat pan grease pan add batter. I could get more fussy, but this is easy.

There is nothing healthy about buttermilk, butter, flour and sugar. You just mentioned the typical pancake recipe...

Replace flour with whole wheat flour.
Buttermilk should be replaced with reduced fat buttermilk or whole milk, reduced fat or fatfree milk works ok too as long as you use powdered and you can play with consistency.
Sugar has a few substitutes that are natural and beneficial at the same time.

Agreed. The full fat milk will actually slow an insulin spike from the flour. It doesn't really matter if it's whole wheat or white flour, it still produces an insulin spike.
