I have spent a bit of time on similarly sized sunseekers to the ones you posted, I don't think they would be great to live on long term if you were not cruising around basking in the sun and drinking in port every night. The rooms, when you think of them as rooms rather than cabins on a boat, are tiny. I imagine the gin palace décor would get fairly wearying after a while, and as others have mentioned they cost a ton to run/maintain.
I had a look at a few boats now and the idea is not feasible, simply because of the little practical things

Like cabin space, heating in the winter etc...
It's a shame, I was really set on gettin' myself a pet alligator.
