Oyster Recipes

My girlfriend got back from a visit to the Chesapeake Bay today and brought me a BIG jar of fresh shucked oysters. I made fried oyster po' boys for dinner tonight because we had everything I needed on hand, but now I'm wondering what to do with all the rest of the oysters. The only other oyster dish I've ever made was just oysters on the half shell broiled with garlic butter, parsley and parmesan. Simple but delicious. So who's got some good recipes for me? I was thinking of doing an oyster bisque of some sort, but I'm really up for any suggestions.

Damn too bad they aren't live. Nothing beats freshly shucked oysters with nothing but lemon, vodka and parsley.

Maybe a common recipe but add some bacon bits and worcestershire sauce. Put under a hot grill for a little bit. Oysters Kilpatrick.

I generally only eat oysters raw, so I'm not an expert, but you may be able to steam them even if they're not live. It's not as good as raw, but it's not a terrible second best.

Oyster stew and oyster dressing is good too.

Only time I ate them cooked was Oysters Rockefeller. I'd preferred them raw.

Thanks for the article. I'll try the chipotle butter recipe, and also the proscuitto stew.

the chipotle butter is good. but i just fixed the stew again last week for a tv spot and was pleasantly surprised at how much i liked it.

Just finished the stew for dinner. Delicious. I added a splash of sherry at the end which I thought tied it together nicely. Thanks for the recipe.

This is perhaps the best thing I've ever eaten. The recipe gets vague at the end, so you'll have to figure out the pastry aspect of this (of which I know nothing).

Steak and Kidney and Oyster Pie:

2 pounds beef
1 pound veal kidney
2 tbsp seasoned flour
1 large onion
3 oz butter
1/2 pint each, chicken stock and red wine
8 oz mushrooms
Bouquet garni
18-24 oysters (or more)

Sprinkle meat with flour. Fry onions. Brown meat and de-glaze pan with liquid. In another pan, saute mshrooms and then add to meat and onions, along with bouquet garni. Simmer in oven at just under 300 degres for 1 1/2 hours (or a little longer). Remove from oven and allow to cool. Put filling in pie pan, cover with pastry, and cook in oven until browned.
