The Joy of Cooking has every recipe you will ever need to make the basics. The flourishes and variations you can come up with yourself.

I was very happy with How to Cook Everything, but I like the Cook's Illustrated book (America's Best Recipes, iirc) even better.

I really think mine would be Good Eats: The Early Years. I like Alton Brown I know some don't but I do.
