Eli, if you can't tell how your shirts fit properly yourself, I don't know what to tell you. Learn to stop caring about how things fit and just be comfortable with what you have (wait I think that's yohji thread title).

elisix, find shirts that fit in the shoulder. Once you get this down, it seems like it'll pretty much fall into place for you. All those shirts look a bit big in the shoulder and thus are making the sleeves all weird and the drape strange, especially when they are tailored slimmer in the body.

You guys are crazy, that Prada fit looked really cool (though a slightly shorter cock-bip or whatever would be an improvement)! Fit + proportions don;t necessarily need to be flattering, just balanced.

And Synth is right about Nelson fits. Super basic, but stand out because nothing is skinny fit.

Elisix, I've had the same problem with some shirts not allowing me to move my arms freely. I realized that I needed shirts with a box or side pleats to solve that problem. I believe your JCrew and Gitman shirts might also have that and that's what makes it possible for you to buy them in M. So might be an idea to avoid shirts without pleats and go for those brands that offer that.

g trans is correct. all those shirts are too big in the shoulders and no amount of tailoring is going to fix that.

I have a feeling Elisix could make a killing if he posted his entire shirt collection on ebay (ELISIX'S GINGHAM SHIRT COLLECTION 100% AUTHENTIC NO RESERVE)

It's a piece of styleforum history. Worth thousands at least.
