What do you do when you want your w-2, but the restaurants you used to work for either closed or are under new management?

They are still obligated to provide you with one, as I understand it.

I worked for a start up that went under, they still had to provide me with a W-2

Chances are your startup outsourced its payroll functions, so even when the company went under, the payroll company still provided you with your W2. This was my situation a few years ago.
