I also think it's the industrialization of the way we treat meat in this country. The whole process is very opaque, and by the time it's packaged for cheap efficient shipping, we are far removed from the animal we eat. But you're right in the fact that we have the supposed luxury to eat just the muscles of meat since it is so cheap to produce at this industrial level. I say
supposed because, in the past, it would be; but the way we go about the process today is to the detriment of the environment, the dignity of the animal itself, and the connection we have to what we eat.
