We take what we want and discard the rest, and I can see how after doing that for generation after generation it can start to change how we view the parts we've been throwing away for so long.

I also think it's the industrialization of the way we treat meat in this country. The whole process is very opaque, and by the time it's packaged for cheap efficient shipping, we are far removed from the animal we eat. But you're right in the fact that we have the supposed luxury to eat just the muscles of meat since it is so cheap to produce at this industrial level. I say supposed because, in the past, it would be; but the way we go about the process today is to the detriment of the environment, the dignity of the animal itself, and the connection we have to what we eat.

has anyone heard the story that the word "chitlings" or "chitterlings" originates from the phrase "shit linings"? I heard this decades ago from black people, there is absolutely nothing on this on google.

Folk etymology.

Real etymology:

chit·ter·lings also chit·lins or chit·lings (chtlnz)
pl.n.
The small intestines of pigs, especially when cooked and eaten as food.
[From Middle English chiterling, probably diminutive of Old English *cieter, intestines.]

I've not heard this before, although growing up in the South I heard lots of references made to chitlings. It makes sense though.
