I love so many different mushrooms. Every time a new season comes in, I get all excited. Morels, oysters, trumpet, black trumpet, candy cap, porcini, truffle, chanterelle, lobster... All of them. Currently I'm really enjoying matsutake, mostly b/c it's still kind of in season and I had never heard of it before I got my job here. The flavor is incredible, and they are beautiful.

straight up garden variety champingon, on pizza, in pasta, grilled. I get a variety of good, very fresh Asian mushrooms cheaply here, but they're rather boring outside of Asian recipes usually.

keep an eye out for Japanese varieties that used to be scarce but are becoming much more common. hen-of-the-woods is one, shimeji is another. they can have great flavor.
