I added an additional gratuity at Per se even though it had been included. The service was exceptional, and the server most deserving.

if it's included i usually don't add more unless it was extraordinary service ...

service charge is a common thing here, but I still do give a tip depending on the service I get, although its rare I give 15%.

As strange as it sounds, I would also add that I'm more likely to be pleased with service when it is included than when it's not. Knowing that waiters are attentive even when they know their tip is mandatory makes me incrementally happier about their service.

I usually leave 5-8% extra as the service is always spectacular. And I always leave tips in cash if I have enough on me.

P.S. Does it matter to the staffs if you leave tips in cash or by credit cards?

Like others in this thread, if service is already added in I don't typically leave anything extra unless I felt that I received particularly good service. Quite frankly, I dislike the idea of having service automatically included though. IMO it takes away the desire for the individual(s) to "earn" my tip.

sold the business at the end of 2008 and moved on. i believe my former business partner had some issues with licensing and is now opening a shop on the LES. i do appreciate your support though!

Some restaurants I've encountered which include a gratuity in the cost of the meal actually pay that gratuity to the host/hostess and bartender/sommelier, BUT your waiter/waitress does not actually receive any of this. Obviously, there's no way of knowing for sure, but I usually tip if the service is good. At the very least, I'm giving some people an extra bit of cash for their hard work.

Yes, some restaurants pool all tips to divide among all the staff. When I'm aware of this I tend to give cash directly to the server, if deserving.
