I think theres too many variables to say anything definitive either way.
The main point is the fact that your eating them.
Personally I go leafy greens fresh and most other veggies frozen. Peppers/onions and shit that I actually put in recipes are fresh. This is all purely for convenience (greens you just pull out of the bag and eat, others just microwave for a few mins).

if you are using R for statistics (rather than say signal or image processing), why would you need Matlab? I need to (re)learn matlab for using SPM though...

Spinach, kale and arugula/rocket

 

I generally don't cook greens which is why I favor those, they are good raw.

Most of the other veggies I eat are the steam in bag variety or onions/peppers that are easy to saute by themselves or just add to recipes.
