xMAS gift idea for a new female friend.

Folks:

I need some ideas on an Xmas gift for a new female friend I've met a month ago.

Here are a few details:
Me: 39,
Established, working IT professional. My style/taste runs more on the conservative/classic side. Slightly creative.

She: 29.
Did a career change and now back in school in the medical field. Her style is casual and chic.

Met a month ago on a random hiking outing. Since then, we stay in touch via emails and phone calls. Been on 3 dates with this person so far. From my perspective, it looks promising and I'm hoping this to develop into a long term thing.

Now Xmas is here and I'd like to get her something, but I'm at a loss of what to get her since she is new in my life.

To give you an idea of who I am: If she were my GF, I would get her a nice windbreaker jacket and take her to my favorite tailor to have it fitted exactly. Also, inside one of the pockets would be a Tiffany necklace. But since she is not, I'm having a little trouble finding just the 'right gift'.

One thing for sure: I will be making an xmas card to go along with the gift.
(Worked as a graphics designer in college).

Gift ideas?

I'm a big fan of experiential gifts, I have over the years bought girls weekends away (with me of course), skydives, dolphin swimming trips, bungee jumps, rock climbing classes, language classes and so on.

Something like that appropriate?

how about a night out? dinner at a really nice restaurant and dancing afterwards.

Seems a little heavy after three dates. I would just wish her a happy holiday. But that's just me. Maybe something very lighthearted... related to her area of medicine. Like special expensive-as-hell coffee to keep her aware when she's studying.

Id go with the cheapo coffee Idea, or a night out. NOT super nice, dont be THAT guy... but something a little classier than applebees.

I been seeing my ***** for 3 months, no commitment or anything like that, I may just take her to BJs pizza and out for drinks afterwards. Then stuff her stocking, if you know what i mean.

Personally, if she's someone you're seeing and you're not exclusive yet, I'd simply take her out somewhere nice and buy her really nice flowers. Or like M@t said, maybe plan a weekend/overnight trip together on your dime. Something simple like skiing if there's somewhere a few hours from you.
