Yep, I try to let mine rest a couple of days after roasting as well.

Just put in an order at Sweet Maria's for six pounds of beans and also ordered a Handybrew. patrickbooth, what grind consistency do you use for it? I grind with a Baratza Encore. I've read that the Handybrew grind should be relatively coarse, but not necessarily as coarse as used for French press. Thoughts?

Not sure, I kind of ignore grind size with it and just adjust brew time to suit my taste.
