Nevermind. Just got a call from a client who was charged with some very serious crimes (terroristic threats among others) and his court date is Monday, so looks like I will have to do some serious work tonight and Friday. Oh well, such is life.

Hadn't intended to, but did anyway. Basically caught up on reading I'd been putting off.. Smoked a big cigar at lunch, which is rare for me, lunch, that is..

Tomorrow there is a big charity event we're doing to feed the homeless. Something crazy like 300 guests.
For that, dressing had to be made, cranberry sauce had to be made, red cabbage had to be braised, turkey legs had to be sous vide, breasts had to be roasted, mashed potatoes had to be made, white chicken stock had to be turned into brown chicken stock to be turned into turkey stock to be turned into gravy, biscuits had to be made, and pumpkin soup had to be made.
For 300 people.
PLUS the regular prep list for the actual restaurant.
And instead of the usual 2 or 3 prep guys, I worked alone the last two days.
Since 6 AM Tuesday, I've had a total of 10 hours off the clock.
