Received a white truffle the size of my nut today. It cost a grand. Sometimes I think this entire world of food is just insane. Other times I think that's the only reason I work well within it.

Yup, the price of truffle is insane. I know a place where it's $20 per gram, shaved on any dish! I'll be eating there next month.

Just put 12 feet of natural sausage casings, i.e. pig intestine, to soak in water to get the salt and funk out.
