Damn this thread. Gonna go get some tacos before work now. I love a good simple taco. I hate hate hate burritos and shit like that though loaded with everything under the sun. I like good fresh tortillas, well cooked/marinaded meat (chicken, steak or fish), some fresh pico or a fruit salsa, maybe a bit of guac depending on my mood. and just go to town. Sometimes just good grilled vidalia onions and some guac along with some nice steak or chicken will work. Fish tacos are good but i'm not a traditionalist. I don't mind if it's a different fish or grilled or without crema and slaw. Whatever works

We regularly make grilled fish tacos with crema, slaw and chipotle salsa, so good and super easy. Made them just a couple of days ago, but this post is making me crave them again. Also, I usually make extra skirt steak when we have fajitas so we can have tacos al carbon the next day. A little lime juice, cilantro and red onion and your set, although if we have some left over pico or guac that might get dumped in as well.

Carnitas. Braise some boston butt for 3-4 hours, shred it, then back in the oven to crisp it up. Throw some chopped onion, cilantro, and tomatillo salsa on it in a corn tortilla.
