Typically on watches which have a day-date function the settings work like this:
To set the date: pull out the crown to the first stop (click) and rotate clockwise (toward the 12).
To set the day: pull out the crown to the first stop (click) and rotate

If the day wheel is in 2 languages, they will be consecutive, i.e. MON LUN TUE MAR WED MER, etc.

To be sure, the easiest way is to set the day-date to the day-date before the current one, and then set the current time, passing through midnight, which will then set the day-date to the current one.
