You can completely customize the look. Miranda IM is modular, you can load plug-ins for the protocols, for customization of the contact list, customization of the chat window and so on.

Use whichever one most of your friends are on. They all are the same in that they all suck ass. As far as what client to use, I like Pidgin, but if you are only choosing one, then I guess it's pointless.
