Depends on how much you are willing to pay. The leather/dovetail combo will surely cost you more than the all rubber. You will also need to specify to the cobbler. If you are really particular you can also specify a JR dovetail heel replacement which is even more.

This was assuming we could do 10 of these custom shell shoes. I couldn't get the links to work but the bourbon dalton is one pair I really regret not getting was hoping they would bring them back. I don't get on Facebook enough one day sell is to fast. I would loved to have seen your pictures

Not sure if it is any cheaper, but there is probably an option for a regular combination heel. It lacks the dovetail aspect.
There is no advantage per se, other than aesthetics I suppose. If you are going to topy the forefoot, you might as well go with the full rubber heel.
