Cebollitas are great. Try them with lime juice next time.

Everything on that plate looks terrific (especially nice were the snails), except for the scallions. I just can't eat them.

I am not a fan of green onions like this. I'll buy bigger scallions to put in things but normally not green onions as a garnish or an ingredient. They're just kinda bitter. But grilled they are awesome...

There's a popular dish in Vietnam with green scallions. You basically shock the white part (only) in icy water for a couple of minutes, then dip it in a salt & pepper mix when you eat it. It's supposed to be very refreshing and all those who tried it raved about it. Something I'll never know.

Not allergic, but I have an instantaneous gag reflex whenever I smell/taste raw or near raw scallions. Doesn't happen for any other onions, though. BTW, what's in the rub for the salmon?

I do this every time I grill. Tastes so good. Also skewered, grilled cherry tomatoes and grilled eggplant.
