pork talk! I made pork belly 2 nights in a row recently
one in the Pressure cooker for 45 minutes, and the other sous vide for 48 hours. Both very similar but I liked the texture of the sous vide.

In other news, 2 courses out of the 12 at Viajante recently was pork. First was from a pig whose diet was 100% acorns, Pluma and Jowl (notice the color of the meat o.o). Second was pork tail, it was like a thin pork belly. Both incredible
cabbage covering it :/

Did you brine? Pork belly becomes amazing if you brine + sous vide

Do you have a lot of shit specifically on that hard drive? Reformatting usually isn't too hard (assuming you have drivers stashed somewhere).
