Check for some Spanish recipes. I had some oxtail after watching a bullfight in Madrid and it was pretty magical. I'll try to look for some recipes.

PS. My mom just made pho using oxtails (pretty expensive, considering you can just buy beef bones for .69/lb) so this is just perfect timing as we now have some leftover oxtail.

Oxtail soup- its become quite expensive, I've living in Australia atm, and i Buy it from my local chinese butchers for AUD15 for a tail- approx 6-8 servings. In Hong Kong its a LOT MORE EXPENSIVE, maybe 2,3x the price 1) Slice away all the fat (white bits) from the oxtail (important step)- assuming your butcher has already segmented the tail into smaller pieces so you can boil. 2) Cover lid and simmer for 3 hours or until meat is tender off the bone. Be careful don't add too much water else your soup will be bland and tasteless. Just use your best judgment, i don't measure how many mLs i add when i cook. 3) Optional- Put in fridge overnight, and scoop out all the coagulated fat off the top. - you wont' believe how much butter you can get out of this..its frightening.. enough fat to clog your arteries and kill you 5 times over. Otherwise just use something to scoop out the lipids off the top. 4) Put in roughly chopped Potatoes and Carrots and boil for 20 minutes until soft. 5) Put in roughly diced Onion and Tomatoes and boil for further 15 minutes. 6) Salt and Pepper to taste. You can use the soup and vegetables served with spaghetti noodles as a main. or just enjoy the soup outright for dinner as an entree edit: i'm young but been living independently, hence need to cook for myself. Boiling chinese medicinal soups and various other soups is part of my healthy diet!.
