I think I paid 4.99/lb for grouper a few weekends ago.

Sole we get isn't sole, and what we do get is a pain in the ass to cook. Better to fillet it and braise it for about ten minutes in white wine. If you want to cook sole in butter, go somewhere like Wild Edibles and pay up for real Dover sole. It is firm enough to cook that way.

This has come up before I seem to remember.

Because of its prestige, the name "Dover sole" was borrowed to name the eastern Pacific species Microstomus pacificus, a quite distinct species with different culinary properties: the Pacific sole has thinner, less firm fillets and sells for a lower price.

It's a bit nerdy but it might help with the fish threads if people put the latin name after the common name as the same nomenclature can mean different sorts of fish in various parts of the world.

Anyone here like steelhead? It's cheaper than salmon and I personally like the taste more.

Just bought some catfish...3 nice full size fillets...$9!

I occasionally enjoy steelhead, - but sometimes I'd rather have the smaller varieties of trout like rainbow or ruby. It has the most magnificent roe, but it's amazingly hard to get - I've only had it at Tribute in Detroit and Alinea in Chicago. Never seen it in a store, and the folks at Fox and Obel (who have a lot of caviar) had never even heard of it. I should have asked at Dirk's today BTW - they were $5/ea. for Soft Shells right now.

Tastes pretty close. Less of that fishy-salmony taste though.

Mullet might be the only fish I really despise. The smell of freshly netted mullet is not pleasant, though one can't expect much else from an algae eater.

FYI_ mullet are the only fish that have gizzards (like birds). There area few Gulf Coast restaurants that serve them as appetizers (deep-fried of course).

Last week, dozen select shrimp cost me $4.99, which in turn caught three keeper-sized spotted sea trout.

Embarrassingly I have not had fish in almost a month.
