what to do with all this basil?

my mom grows sweet basil as well as asian basil in her backyard, gave me a shitload.

i've made enough basil pesto already, and im making thai basil chicken tomorrow, and i put some basil in my homemade pasta sauce...

how else can i utilize basil in cooking?

I've had great luck with freezing fresh pesto. That's what I do when I end up with too much basil for immediate use.

Or take freezing basil to a new level and make basil gelato, ice cream, or gelee.

Dehydrate them and put them in a jar for later use.

Steamed mussels with basil. Also beef stir fry with basil and chili.

Basil ice cream. I had some Saturday night at Oakley's, a restaurant in Indianapolis. It was very delicious.

Basil Mimosa's are really good, too.

deep fry some, sugar it while hot and sprinkle it on garlic chicken.

Basil oil - good for dressings and for garnishing everything from soups to entrees.

Just had my first scoop of basil gelato the other day. Taste was out of this world, in an extremely good way.
