I use Colonil Mahogany / Bordeaux on my Vass Oxblood.  Saphir doesn't make a burgundy-toned polish as dark as Vass' oxblood, but I guess alternating with black would get you there.

I used Saphir Bordeaux (08) on my first pair of Vass, which was in dark cognac. The polish turned out to be an incredibly dark shade, close to black. I stopped using it on my dark cognac shoes as it was darkening my shoes.

 

Perhaps this shade is exactly what you are looking for? I'm looking at the polish in person right now and it seems to match Vass oxblood on my screen.
