So question for you gents, do you guys take same size for p2 last vs F last?

I do. P2 has a bit more overall volume IMO though.

I don't.  I size down by a half for P2 versus F.

Does anyone have any experience with Vass single monks on any other last than U? The U last works for me if I go up half a size, but I'd rather prefer F or particularly P2. The only concern is that single monks might look a bit dull on those lasts, especially on P2 unless there is a toe cap seam to 'negate' the roundness of the toe a little bit. Trouble is, I'd prefer single monks to be as clean as possible, i.e. without medallions or even toe caps.

I have a feeling I would also have to size down a half kind of like eg Dover 606 last.

I agree that P2 has a bit more volume, although I'd keep the same size. If you do size down  a half  and if you want to buy oxfords, I'd suggest to make sure that your instep will be fine. P2 already has a lower instep than F, and going down half a size will make it noticeably lower. If your instep is high, you may have a problem with that in oxford shoes.

Have average foot & instep. I have shell F last boot 42.5 EU & was thinking about p2 last suede boot.

Then you should be fine either way, I think, and since you're thinking boots (not balmoral boots, I suppose?), there's a lot of leeway when it comes to adjusting the volume with sock thickness, if absolutely necessary.
