i can see the appeal if a wine is super closed and one wants to open it up a bit. that is, i can see the appeal to giving it a decanting, nevermind the blender part.


having said that, as you alluded to, decanting does just that - opens up the wine a bit. Can't replicate the qualities a wine gets when it has been sitting in a cellar for a few years.

I've noticed that with older wines they do open up a lot and generally can continue to produce different qualities as they open up. With younger wines opening them up helps tame them a bit, but they also go downhill very fast. Cheaper, younger wines open more than a few hours I can start to taste the change whereas an older wine will continue to open up.

frown.gif generally I'm gone after about half a bottle Asian genes but also haven't trained as hard as the fob Asians. My friend was telling me how his whole extended family drinks and they've been training him since middle school on soju. Once he got in high school his uncles would run the gauntlet on him

Just seems like a bad idea to drink too much when you're young. If that were the case with me, I would've just been thinking about getting drunk all the time then.

Once I was at Bemelman's bar and there was this old geezer at the bar next to me. He literally looked like he was about to die. Just incredibly old, impeccably dressed and he was drinking scotch like it was water. I couldn't believe it. Maybe he was trying to kill himself, but I would have gone to the hospital.
