IMO there are very few Sauv's meant to take age, they're meant to drink soon, so it's those primary characteristics: bracing acidity, clean, racy, fruity (eg grapefruit especially) that matter. It's not a subtle wine that develops unique complexities with age... I find it stays about the same or gets worse.

I had an '04 Silex about a year ago, and it was wonderful and clearly had the legs to last. Worth seeking out any mid 2000's stuff from that producer.

Going to Per Se on Friday. As has been discussed here on numerous occasions, the wine list is obscene. Is there anything gauche about bringing three of my own bottles and paying the corkage fee? I would be bringing pretty good stuff (maybe $100ish retail) but not epic, rare bottles.

1) The corkage is also obscene. $95 last I checked. You'd be better off finding a couple of bottles in the ~$100 range. They do exist. The upside is, they will be better food wines than a lot of warhorses would be.

2) If you bring anything on their list, they won't open it. So make double sure.
