I've had great success with only a few ingredients:

Lentils, diced onion, whole black peppercorns, bay leaves, salt, and water.

Other ingredients mentioned won't hurt, especially carrots, celery, olive oil, ham (or sausage, or bacon).

I make a Syrian lentil soup with cumin, coriander, garlic, real pomegranate juice or pomegranate syrup, and some swiss chard. try this one

I leave out the seeds when the fruit is not in season.

Lentils are also excellent with roasted chestnuts (available frozen at Trader Joe's). Try these two Joyce Goldstein recipes:
