This weekend at the farmer's market I found a vendor who was willing to get me some sweetbreads and other things. They didn't have any on them at the market, so they told me to call in a special order sometime this week and they'd bring it next week. They specialize in organic grass fed beef and organic pastured pork. I'm trying to find a good vendor for lamb around here that goes to Chicago markets--- if anyone knows of one, let me know.
Anyway, I thought this would be kind of fun. Vote for whatever piece of offal you'd like to see me cook and I will:
1) Contact the vendor and see if they can bring it for me, and if they will,
2) Prepare the offal in either a way suggested in this thread or in my own way
3) Upload pictures of the offal, the cooking process, and the final dish
4) Eat it and comment on it.
Voting will need to end probably by Wednesday sometime, so I can call the vendor and see if they have the item available. Anyway, enjoy.

I have very little experience with offal, but I think it'll be fun to see and experiment around.
