Milk is fine, not meat.

Stems from the need to keep the cow as a work animal to plow fields and as a source of milk. Easier to tell people it's holy so that they dont eat it and find themselves milkless and unable to plant crops next year.

Kinda. The cow was mostly made sacred because it's easier to tell poor uneducated people "It's sacred, dont eat it" than to try and explain to them that if they eat it they wont have something to plow the field and provide milk next year. Religion has much more power over logic in some situations.

At least it has roots in practicality. I dont get some of the hebrew / islamic dietary laws at all.

no. specialty cheese hops selling stuff like brie are very rare (and that stuff's imported, obviously). most of them buy stuff like kraft singles anyway (except from indian companies and probably slightly lower-quality) regarding your question about the milk, i would guess there are special cows hidden away (perhaps in the temples???) that only produce milk and are not eaten to be honest i suspect a conspiracy
