Just rest. Fatigue will build up. That's the point of exercise programming.

Possibly the most intelligent thing Matthew McConaughey ever said in an interview was when he was talking about staying in shape, that he tried to do something to break a sweat every day. I'm usually in the gym Monday through Saturday and try to get in a hike or some other outdoor activity on Sundays, at least enough to break a good sweat.

I go to the gym 5 days a week. The remaining 2 days are either rest days or days that I play hockey.

The concept of rest depends on two things: the level of fitness of the person resting and the goal of the athlete.

If one doesn't feel one "needs" a rest day (actual rest, not x-training, "active rest," etc.) they probably aren't pushing themselves very hard. If the athlete's goal is maximum performance, rest days are vital.

This said, if one wants to simply "be active" by walking, mowing the lawn, strolling with wife, etc., 5-7 days a week for months on end is doable. If one is marathon training or strength training it most certainly is not.

I do nothing on my rest days. If I feel that I am able to work out on my rest days I see it as not having tried hard enough during my workout day and make it a point to up the intensity next time. I'm just not satisfied anymore with my workouts unless I feel like a car hit me for 2 or 3 days afterward.
