parts of animals not popular in the US

Chickens have a lot of interesting parts that don't seem common in the US. I finally had chicken feet (in a soup). I've also eaten several of the organs (hearts, livers, gizzards, intestines).

Same with pigs and cows. Tongue is fantastic, intestines are also good, whether alone or used for sausage casing. Stomach is good. Etc.

Why is this stuff not popular in the US?

You can get some animal parts here in the South that probably aren't common elsewhere. I know you can get pigs' feet and snout at the Kroger. I've also seen cow tongue at the grocery store. I've seen chicken parts too, especially gizzards, livers, etc.

Just seems like the US is a culture of chicken breasts, pork chops, bacon, ham, steaks, and artificial casings for sausage.

Cock's comb. I had this amazing cock's comb and rice dish in Spain two years ago. I don't really remember it other than the fact that I liked it way better than arroz a la marina I had in Cadiz (which was also fantastic- I went to the same place three times just for this dish).

Sheep's head is delicious. It's best when it's hard boiled and served with a pinch of salt and cumin. Sheep's spleen stuffed with onions and fat grilled kabob style is also amazing. Actually all parts are popular here in the U.S if people actually know what goes into hot dogs.

I live off of streetfood offal on a stick in Hong Kong. The taste isn't bad at all it's whether you can get past the fact it's lung/stomach/liver etc.

With the ethnic diversity I would say there is nothing that is not popular to someone somewhere.
Human beings will eat anything on 4 legs except a table or chair, and anything with wings except a vulture or airplane.
