took my family to the big apple bbq today. We purchased a $100 fastpass and my goal was to have the best bbq while enduring the shortest lines. I'm a certified bbq judge, so I've included how the q might have scored in a kcbs competition.
Started with ed mitchell's whole hog pulled pork. After picking up our sandwiches, I stopped by Ed's pit and asked for some pork skin to mix into the pulled pork. The pulled pork was just about a perfect rendition of nc pulled pork, redolent of vinegar and lightly flecked with red pepper. In a bbq competition, I'd have given it an 8 for appearance, and perfect scoes for texture and flavor.
I would have loved to have had chris lilly's pulled pork but the line was too long given I had family in tow. Last year, their pulled pork was sublime. The line for mike mills 17th street bbq was twice as long as lilly's line. I love Mike's book, Peace, Love and BBQ, but his ribs were not great last year. I was surprised Mike would put out a product like that.
IMO it of defeats the purpose to buy NY bbq at the bbq apple bbq, but the line for Hill Country was empty and my son wanted brisket. I've been to a number of hill country shrines including smittys, kreutz and luling city market and this rivaled anything I've had in texas. Brisket is the hardest meat in a competition and these guys would have blown away all comers. I'm thinking perfect 9s.
I'm not usually a sausage lover, but after tasting the sausage in Texas Hill Country, I had to figure out a way to bring back a couple of cases on the plane. I picked up a couple servings of Salt Lick sausage and was disappointed. This sausage lacked the snap and spice of the best texas sausage.
My kids were getting antsy, so I spent the remaining fast cash balance on some memphis ribs. Nice memphis rub, but the ribs were a little too fatty. Still, a nice end to this years bbq.
