Once you have 3 or 4 Martinis, it won't matter. At least, that is the way I do it. Plus the Ribeye is my favorite cut.

Also keep in mind that just because it is real Kobe beef, doesn`t mean it`s going to be amazing. The cheaper ranks (although not exactly cheap) are going to taste completely different from the more expensive ranking beef.

Kobe is not the only region that produces amazing beef in Japan either. There are many different regions of "Wagyu" beef, and all have their own character/taste.

Grass-fed beef is going to be between lean and ya-gotta-be-shitting-me lean It all boils down to individual breeds. Whether ribeye or NY strip, the meat is likely to be hard as fuck to chew. Unless they tenderize it prior to cooking. But then you wouldn't know if they'd used powdered meat tenderizers. Grain-fed beef though fatter and therefore tastier, may come from an animal fed genetically modified corn, while being injected with hormones and antibiotics. Hope that helps

I went with the grassfed ribeye. It was a little chewier than cornfed steaks I have had, but not too noticably. The ribeye did have a good amount of fat on it, but not too much. The flavor was fantastic, but to be honest, if I didnt know it was grassfed in advance, I would have never known.

Ive never had a grass fed steak, so I think it could be interesting. The ribeye is my favorite cut.

The Wagyu is about 2x the price. Sell me.

Not sure if you are set on Craft Steak, but I would highly recommend BLT Prime. I was a big fan of Craft Steak (and still am) but I thought the beef at BLT Prime, especially the filet, was head and shoulders better than what I had at Craft Steak. Plus you get an awesome and huge popover at BLT Prime. Aside from the beef I think the sides and apps are of equal quality at both places meaning that for me BLT wins out.
