As of recent I have been on an avocado kick (the smaller black skinned ones. Hass?) since rediscovering the wonderful fruit. I can't get over them. Just cutting them in half, sprinkling on some sea salt, and eating right out of the skin has be doing the trick. Delicious!

Let's hear about your avocado recipes guys.

I love me some avocado. On sandwiches, as Guacamole, or just with some salt and lime juice. I really like making a quick easy salad with them with the following:
avocado, tomato, and red onion (and sometimes cucumber) cut in small cubes
sprinkle on some kosher salt, olive oil, and the juice of a lime
toss lightly and eat. mmmmmmmmmm

Coincidentally, I have on my desk leftover of an avocado shake from earlier. It's made with avocado, soy milk, condensed milk, and ice--all blended up into a smooth consistency. Very fulfilling shake that's full of fat. Yummmm.....

I could spoon guacamole all day long.

My absolute favorite avocado recipe of all time: sliced avocado+light sprinkling of garlic salt. Otherwise, I throw it in with breakfast. It goes great with migas or huevos rancheros. Ceviche works wonderfully with avocado too.

In a pinch, I cut open an avocado and spritz in some TapaTio, then spoon. I also eat some with eggs and salt every morning.

No need to mess with perfection. Avocado, minced garlic, a little lemon juice. Mash to a lumpy consistency. Scoop with chip of choice. Repeat.

I'll also add it to salads and on the occasional burger.

I used to eat an avocado for breakfast everyday when I was rowing. No need to put anything on it. If you're feeling like messing around a bit, a little cumin, red pepper, and a dash of lime juice makes for a wonderful little snack. Also fun to do: make yourself a full sized quesadilla however you like it (personally I like hot salsa, "Mexican" six cheese grated cheese, a little tomato pesto and freshly diced tomatoes) and after it's done, apply some sour cream to the face and throw on some avocado and then fold it over on itself. Good stuff.

No garlic?

Also works well in a BLT (sub or add-on).

Eggs, salt and advocado... I have this at least once a day. Always with mayonaise, I seriously think I eat too much of it.

It's pretty hard to get decent avocados in the UK. It is sad, and guacamole here is always disappointing.
