Personally I like "loungey" places with a fun beautiful crowd.

Dude take your time and figure out exactly what you are looking to operate. Don't try to satisfy everyone. Find your market and pursue it. There is nothing worse than lame bars that try to look up market or stylish places with lame crowd. Like they mention earlier in the thread, it may make a ton more sense to work somewhere for a year or so and figure out the workings of the industry then buy a mid range place and work with it before opening your dream place.

I agree with Jodum.

I would really find out if this business is for you. It is much different to run a place and you'll want to be happy. Get a job at a succesful club for a few months and see what it takes. I had several friends that ran bars and I knew many more back in the day.

One very good friend, was one of the most succesful bar owners I knew, but he had gone from being the "hot" bar to average to "hot" again. He was fond of telling us that he was happiest with a mid-size trade. More people=more fights=more security=more costs=more trouble from cops and licensing, etc. All of the reallly long-term succesful bar owners had a steady trade of drinkers. Far more valuable than fickle fashion.

Location matters a great deal too - any of the bars around something like a Wrigley field will always make money if run semi-competently.

As far as expansion goes - there are very few clubs/bars that take off as a concept. All of them have a specific niche. Have a nice day cafe is one example, but there are precious few others. What you mentioned earlier of having different nights, doesn't really appeal to me as I may not be in the mood and it's almost always a different crowd, than the places I liked.

One friend also suggested that the key to a succesful bar was to bring in prostitutes on the first night and have them go home with guys. Those guys will be back every weekend for a year hoping that lightning strikes again. I'm just saying.

Oh damn, that's not so bad...

OK, dream is back alive. Any new blood want to give input?

A little bit more specificity: wine bar/lounge outdoor terrace closed off in the winter time. In a trendy, cafe-focused part of Budapest.

aside from prostitutes, consider a legitimate modeling agency. put a few outside and a few inside for the first few nights and make sure enough of your buddies are in their to make the atmosphere. remember you can have the models and your buddies dress how you want them to in order to convey the type of vibe you want in your place.

Yeah I'm actually looking to a designer here for waitress "uniforms." If Audrey Hepburn wore Cloak. Sort of. Also may have an in to a bunch of models who need night jobs. I can do so much stuff here that either wouldn't fly or I just wouldn't be able to pull off back in the US. It's perfect.

My nightclub idea is a place called Kelp. It will have two dance floors, separated by a giant wall-to-wall 80 foot aquarium with lots of otters swimming around in it. There will be drinks with kelp seaweed as the garnish. Also, all the seats and couches will be made of fine otter fur. It would do well for a couple of years in the coked-out NY scene.
