It's a play off of H2O, since the chef's name is Laurent and it's a seafood restaurant. It's a great place, but admittedly it makes the usage in regular English a little difficult.

I would have called it "Steve". You should start referring to it a 144-Oh since L is the 12th letter of the alphabet, and 12 squared is 144. Too bad there's no real element L. There's Lithium, which is Li. Li2O is Lithium Oxide. Lanthanum(III) oxide is La2O3.

I'm not experienced when it comes to fine dining or whatever, but is it just me or is Noma the most intriguing entry on that list? Fucking Denmark?! I love that country!

I'm surprised Chicago was acknowledged as existing. NY and CA appear to be the only places where food is even edible according to the list.

I'm pretty sure Trotter once held a spot on the list. In theory, Vegas is listed, since there are L'atelier de JR in both NY and Vegas (and a few others, by now).

Very surprised not to see on the list. It dropped from 5 stars to 4 star out of choice. But is still a great place.

Trotter was.

I wouldn't be surprised if Bayless did at some point as well. Mansion at Turtle Creek in Dallas made this list or one similar at one point. I'm sure there is a smattering of none NY/CA places through the years. I was being hyperbolic.

Nah man, Bayless would never make this list. At least, not with the restaurants he currently operates. I'm surprised Trotter didn't even make the top 100, or Le Bec Fin, or L2O, or, or, or. But, I'm sure there are people in every country saying "I can't believe _____ didn't get it."

I can think of 3 more potential candidates from the US. Jean Robert @ Pigall's (I'd be surprised if the Maisonette was not on there in its day) The Inn at Little Washington Minibar (fits the bill for the list)

Again I am hardly an expert and I understand the disdain for Bayless in the snottier food circles but Topolobampo was groundbreaking for its time and it's cuisine. And I do realize it's not the same place it was even 3 years ago.

Fine Dining for many facets of hispanic cuisine is still underrepresented IMO.

These lists annoy me.

I don't even like Pellegrino, why should I care about a list they sponsor?

But really... As Ron said, this list is very molecular gastronomy and Foo Foo French. Best is subjective.
