What do people use for binding their falafel? Egg seems a bit eh... I made these jawns from scratch, using canned beans (and my gf baked the pitas from scratch since they don't sell them here) and the falafel didn't bind that great during frying:

Egg binds well but completely fucks your texture. Just make them like regular and then stick them in the fridge for an hour or the freezer for 15 minutes. It will help them stay together during frying.

I dont go for it weekly, i do crave a good falafel every month or so. Chawarma,however, i could eat every day.

PLenty of places that have awesome falafels here, never tried it outside of lebanon to compare.
