The Minimalist (Mark Bittman) Appreciation Thread

I really do think he is one of the finest food writers around right now. I partly like his dry sense of humor and I also love the flexibility of his recipes. I can't tell you how often I've heard in his podcasts "if you don't have it, don't worry."

He really does come close to perfecting cooking and making a perfect dish.

Just made for the second time his egg noodles in soy broth and it is wonderful. His tomato paella was divine. His springtime soup was outstanding...I forget what else of his I've made but it is always great.

I really liked his show "Bittman Takes on the Great Chefs" or something like that. I saw him recently on a talk show and it seemed like he's really changed some of his views- much more into eating less meat, smaller portions and generally living a more healthy lifestyle.

I couldn't agree more. From the intro to his video's, which always make me chuckle, to the actual quality of the recipe's themselves. The entire bitten blog is great. The thing I love about it is the simple, honest approach to the recipe's. Not really flashy, just realistic, and more importantly, easily realizable recipes. I've been waiting to try that egg noodle recipe, if it's that good, I'm definitely going to try it.

My favorite article of his is the one in which he tells one how to stock a kitchen full of cookware, utensils, tools, and machines for $300. He advocates using cheap cookware from restaurant supply stores and tells how to eliminate all the gimmicks from the kitchen. It's a great article for any young people out there that covet the finest sets of stainless steel cookware being peddled by the latest Food Network star.

I know the one you're talking about. Great read. I'm definitely using it as the guide for outfitting my kitchen. Minimal tools for a minimal chef. The one where he tackles the issue of small kitchens is great too. Explains how it's ridiculous to blame poor cooking on the size of your kitchen or on the tool that you're using. I think he quotes Mario Batali saying something along the lines of 'everyone in my kitchen could make the exact same dishes on electric burners with terrible pots and pans'. It may be harder, but at the end of the day the utensils you use are fairly un-important.

"The Minimalist" is dead however Bittman is now in charge of The New York Times Magazine's food section and the first one reads just like a "Minimalist" column. So while "The Minimalist" may be dead it seems as if it lives on!

I mourned the death of the Minimalist in January, but I'm glad he's available so many other places. He's also writing a weekly op-ed for the NYT and blogging at:

policy is another matter entirely from cooking. i found the comments after his most recent particularly interesting.
