First off, let me say that I don't mean to judge anyone for an unhealthy interest in denim. I have many such fanaticisms. However, I just don't get the fascination with jeans. To me, the appeal of jeans is their utilitarian nature. A pair of Wrangler 13MWZs were designed with a purpose, and wearing them lends a contrasting and refreshing sense of insouciance about fashion. However, premium/hipster jeans are impractical, or at least designed without regard to utility. I'll probably pick up some Deisels or some Wrangler 47s, just becuase the girls like them, but I still fail to see the attraction of the more extreme and intensely studied denims. Can someone enlighten me?

To be dweeby is the nature of men
Denim has the same ingredients of interest as any other clothing. History, design, manufacture etc. It's the same as being interested in handmade shirts (yarn dyes, yarn counts, mercerising, handmade button holes, real pearl buttons etc), bespoke suits and suitings...food, wine, cigars, cars.... premium/hipster jeans are impractical, or at least designed without regard to utility. The same could be levelled at many items of clothing. Like a silk tie or the lapel on a jacket, the perforations in a pair of brogues... the original practical use may have been diluted or loss in time. Perhaps, like a pair of strappy Manolo stillettos or an Hermes chewing gum case, the utility now is for sexual attraction or social status.
The attraction is what you make of it. To some people, one bottle is wine is much like another. I'm sure there's books on why people are drawn to become collectors or obsessive about some subjects. I think it's as much to do with the nature of man as the objects, in this case jeans, themselves.

a more practical response: 1. you wear jeans pretty much everyday so why not spend money on it to get it well-done? 2. the fit on premium denim is better. This means you'll feel more confortable wearing it. 3. depending on the quality of the jeans it will be very attractive, for instance a raw jeans will acquire a very fashionable "wasted" look, besides being an interesting piece of garnment because it changes a lot with time and the way you treat it. It is also very personal
