Bone Marrow

So, last night I bought some marrow bones, put some finely minced garlic on each, a drop of olive oil and put them in the oven at 450 degrees for 15-17 minutes and spread them on toast. Delicious.

however, I was wondering if anyone knows any other dishes that involve marrow. They are pure decadence. I remember having a filet mignon topped with some marrow and herbs that was delicious. Next time I might try the zuni method(i think it was zuni) and just remove and broil on toast to minimize loss.

Also, what should I be paying for marrow bones? I think I pay 2 bucks a pound.

The way you're treating it is similar to what I do, and just about the perfect way to eat marrow imo (also topped with a parsley salad from Fergus Henderson's recipe). Interested in hearing about other recipes too. I can't remember what I last paid, but it was around that price, maybe a little less.

chinese style, cook the bone (simmer for long time) + put a straw in the bone and suck the marrow.

I love a good osso bucco and then eating the marrow out of the bone. I had it twice last week.

There's a joint in town that serves a wonderful marrow aioli to dip fries in. It's called Belly Timber, which is probably my favorite name for a restaurant.

Poached on top of venison medallions is quite good. Deep fried works as well.

There is a soul food bone marrow dish I like alot, but deep fried sounds like some next level shit. Do you just deep fry the marrow?

If it's sliced thin, just do it in a pan.

Check out how they make it at Comme Ca or a similar restaurant. Basically they are floured then sauteed so it's crispy on the outside and practically liquid on the inside. Reply if you need more details, I am headed out the door.

I believe you push the marrow out of the bone while it is raw, then you cut it into think slices, roll in egg and then in bread. fry from there. A restaurant I at which I often eat offers it as an appetizer. It is good, and very, very rich. I've never made it at home. About 90% of the marrow I have eaten has come out of braised veal shanks. Also very good.

wtf, fried marrow.

This is my next quest!!~!~ I already did the hamburger with grilled cheese sandwhiches as buns, guess this will be next. Sounds amazing.
