It's a block of meat jelly. It's not a cheese at all. It's meat from the head of a calf or pig or sheep, with seasonings, formed into a block by the natural gelatin in the meat and stock congealing when cooled. Very cool stuff.

Wouldn't all these cow head and sesos burritos and tacos give you a good case of the...prions? Permanently of course.
I mean, you won't know till you reach 55 or 60 years of age but I wouldn't trust any hole in the wall with all this cow brain and spinal meat, no?
I don't know, perhaps our grocery market ground beef is just as bad.

I've had lengua tacos before and it was pretty good.
