This is something I've wondered, too! My view on folding vs hanging is that if gravity + hanger can influence a garment's shape/feel/whatever, it should be folded. I fold all but one of my Barena jackets. In my experience, hanging them has never seemed like the right move because after a week or two, there will be a weird shape in the shoulders. I do know, however, that certain retailers (unionmade, for example) does hang them throughout the season. I wouldn't overthink it.

 Your tailor should be able to actually alter the sleeves by shortening them where they connect to the shoulder. This should preserve the curve of the arm and the cuff/buttons. Rolling up is an option, too - it really depends on the aesthetic you're after.

 Tough to say how the fit compares to other SNS because I'm not very familiar with most of the line but I'm a medium across the board (I wear a medium in almost all brands) and it fits well - a good, slim fit but not crazy slim. I'd definitely call this TTS. The knit also has some good stretch to it to, so it can meet you more than halfway if you need a little extra. I'm happy to take a few fit pics if you'd like.
